Experience is the best teacher in choosing quality but here are a few pointers on buying some types of vegetables.

ASPARAGUS ….. Stocks should be tender and firm, advice should be closed and compact, point to the stem with little white … that are more tender. Use your asparagus soon after shopping … hardens rapidly.

BEAN, SNAP ….. The small grain in the interior are the best. Avoid beans with dry looking pods.

BROCCLI, Brussels sprouts and cauliflower ….. broccli bunches of flowers and cauliflower should be tight and together. Brussels sprouts should be firm and compact, dirty Smudgy points may indicate the insects.

COL and Lettuce head ….. Choose heads heavy for their size, avoid cabbage with worm holes and lettuce with discoloration or soft rot.

PEPPER ….. Choose long slender cucumbers for best quality. It may be dark or medium green, but the yellows are undesirable.

Peas and beans ….. Select pods that are well filled but not bulging, prevent dryness, spots, yellow, or loose pods.

Root Vegetables ….. should be soft and form large carrots can have wood cores, large radishes can be expressive, oversized turnips, beets and turnips can be woody, fresh carrot tops by usually means fresh carrots, but the condition of the leaves in most other root vegetables does not indicate the degree of freshness.
